AI is changing the way we innovate, bringing the consumer and other demand signals into the earliest stages of the innovation process. Jessica Yankell leads Innovation Insights, Process, and Strategy for PepsiCo Beverages North America. In this role, she leverages cutting edge analytics tools, along with human empathy and interpretation, to help bring clarity to the rapidly evolving consumer demand landscape and illuminate the future playing field in which food and beverage brands will operate. Prior to joining PepsiCo, Jessica led global innovation strategy for Open Innovation at Ferrero, and built an internal incubator at foodtech startup Zume. Jessica launched her career in strategy consulting in Buenos Aire, Argentina, where she worked for five years with international clients across industries including CPG, pharma, packaging, and medical devices. Jessica holds an MBA from Stern School of Business, New York University, and a B.A. in International Relations from the University of Pennsylvania. She is based in New York City.
